Traditional Romanian Cozonac – My Mum's Family Recipe
By Chef Geanina Ursache | Prestige Patisserie, London
An unforgettable taste of home, made with love, walnuts, cocoa and generations of tradition.
Some recipes are more than ingredients and instructions. They carry memories of childhood, family celebrations and the people who taught us to bake.
For us, traditional Romanian Cozonac is one of those recipes.
At Prestige Patisserie in North London, we've been baking Cozonac using our mum's family recipe since we opened in 2016. It's a recipe that has travelled with us from Romania to London, and one that we're incredibly proud to share.
Today, we're inviting you into our kitchen to discover the story behind our Cozonac, what makes it so special, and how we prepare it using traditional techniques.
What Is Romanian Cozonac?
Cozonac is a traditional Romanian sweet, enriched yeast bread, particularly associated with Christmas and Easter.
Its soft, buttery dough is made with milk, eggs, sugar and fragrant citrus zest, then generously filled with ingredients such as ground walnuts, cocoa, raisins or Turkish delight.
Once baked, the loaf has a beautiful golden crust and a soft, aromatic interior with distinctive swirls of filling.
Unlike an ordinary sweet bread, Cozonac is rich, indulgent and deeply connected to Romanian family traditions.
Every family has its own version, often passed down from one generation to the next.
And this is ours.
A Recipe That Takes Us Back to Childhood
Growing up in Romania, making Cozonac was never just another baking task.
It was a family occasion.
We remember preparing large quantities of dough, filling the kitchen with the wonderful aromas of vanilla, citrus and fresh yeast.
The room had to stay warm while the dough was proving, and everyone knew that patience was just as important as the ingredients.
One of our favourite memories was taking the prepared Cozonac loaves to a neighbour who had a traditional wood-fired clay oven.
There was something magical about waiting for them to bake, then breaking open a warm loaf to reveal the soft dough and generous walnut-and-cocoa filling.
That first taste is something we'll never forget.
Years later, those memories still inspire the way we bake.
From Our Family Kitchen in Romania to Prestige Patisserie in London
When we opened Prestige Patisserie in Tottenham, London, in September 2016, we wanted to bring more than professional pastry techniques to our customers.
We wanted to share a little of our heritage.
Our traditional Cozonac became part of that journey.
For the past decade, we've continued making it using the family recipe we grew up with, carefully combining traditional flavours with the consistency and attention to detail of a professional patisserie.
For us, keeping this recipe alive is a way of honouring our family and sharing something genuinely meaningful with our customers.
What Makes Our Cozonac Special?
A Rich, Buttery Dough
Our Cozonac dough is generously enriched with butter, whole milk, eggs and sugar.
These ingredients give it a wonderfully soft texture and the rich flavour that makes traditional Cozonac so distinctive.
Fresh Citrus and Vanilla
We use orange zest, lemon zest and vanilla to create a beautifully fragrant dough.
These aromas are an essential part of the Cozonac experience — especially when the loaves are freshly baked.
A Generous Walnut and Cocoa Filling
One of our favourite parts of the recipe is the filling.
We combine ground walnuts and cocoa with a fluffy egg-white meringue to create a rich, beautifully textured mixture.
When the dough is shaped and baked, the filling creates those distinctive dark swirls throughout the loaf.
Time, Patience and Care
Good Cozonac cannot be rushed.
The dough needs proper mixing, kneading and proving to develop its characteristic texture.
And, of course, there's nothing quite like the smell of freshly baked Cozonac filling the kitchen.
Our Traditional Cozonac Ingredients
Our family recipe makes six generous Cozonac loaves.
The dough includes strong bread flour, fresh yeast, honey, butter, whole milk, eggs, sugar, raisins, rum essence, vanilla and fresh citrus zest.
For the filling, we use ground walnuts, cocoa, sugar and whipped egg whites.
The balance of these ingredients produces a rich, aromatic loaf with a generous filling and soft crumb.

Tips for Making Beautiful Cozonac at Home
Use strong flour. A flour with good gluten-forming potential helps support the enriched dough and its generous filling.
Give the dough time to prove. Yeast activity depends on temperature and dough conditions. Watch the dough rather than relying only on the clock.
Keep the filling generous but balanced. A well-distributed walnut-and-cocoa filling creates beautiful swirls and flavour throughout the loaf.
Bake thoroughly. A richly filled Cozonac needs enough time for the centre to cook properly without the crust becoming excessively dark.
Allow the loaf to cool before slicing. This helps the crumb set and gives you cleaner slices.
And most importantly, enjoy the process. Traditional baking is as much about the experience as the finished result.
When Do Romanians Eat Cozonac?
Cozonac is especially popular at Christmas and Easter, when families prepare festive meals and traditional desserts.
It is often served in generous slices alongside coffee or tea and shared with relatives, friends and guests.
For many Romanians living abroad, Cozonac is also a powerful reminder of home.
The familiar aroma of fresh Cozonac can bring back memories of childhood celebrations, grandparents' kitchens and family gatherings.
That's why this recipe means so much to us.
