Ten Years, One Favourite: Our Vanilla Cheesecake Brownie

Some recipes become part of your story.

We created our Vanilla Cheesecake Brownie in 2016, when we first began our Prestige Patisserie journey in Tottenham. Ten years later, it’s still one of our best-selling bakes.

A rich chocolate brownie and a smooth vanilla cheesecake, brought together in one slice. Familiar flavours, a beautiful contrast of textures, and a recipe that has stayed with us from the very beginning.

Now, we’re sharing how we make it in our patisserie kitchen, so you can bring a little of Prestige into yours.

Two favourites in every bite

There’s something lovely about the combination of deep chocolate and creamy vanilla cheesecake.

The brownie base is rich and fudgy, while the cheesecake brings a softer texture and a gentle tang. Swirling the two mixtures together creates the marbled top, making every piece slightly different.

It’s the kind of bake you can share over coffee, bring to a gathering, or enjoy slowly with someone you love.

A little piece of our beginnings

Opening Prestige Patisserie meant building something of our own, one bake at a time.

This Vanilla Cheesecake Brownie was among the recipes we created during that first chapter. Over the years, new cakes and pastries have joined our counter, but this one has kept its place.

Knowing that something we made at the beginning is still enjoyed today means a great deal to us. For a small husband-and-wife patisserie, those familiar favourites are part of the connection we share with our customers.

Our bakery recipe: 40 pieces

The quantities below make two trays, giving approximately 40 pieces in total, depending on how you cut them.

Each tin measures 38 × 29.5 cm and 5 cm deep.

Vanilla cheesecake filling

Ingredient Quantity
Full-fat soft cheese, Philadelphia type 1,020 g
Caster sugar 254 g
Egg yolks 90 g
Vanilla essence 15 g

Chocolate brownie base

Ingredient Quantity
Chocolate 54.5 % 940 g
Butter 1,300 g
Whole eggs, without shells :) 900 g
Caster sugar 1,170 g
Salt 10 g
Vanilla essence 30 g
Strong white bread flour 526 g

Making a smaller batch at home

Our full recipe is a bakery-sized batch. For approximately 10 pieces, use one quarter of each ingredient quantity.

Vanilla cheesecake filling: smaller batch

Ingredient Quantity
Full-fat soft cheese, Philadelphia type 255 g
Caster sugar 63.5 g
Egg yolks 22.5 g
Vanilla essence 3.75 g

Chocolate brownie base: smaller batch

Ingredient Quantity
Chocolate 235 g
Butter 325 g
Whole eggs, without shells 225 g
Caster sugar 292.5 g
Salt 2.5 g
Vanilla essence 7.5 g
Strong white bread flour 131.5 g

 

Use a smaller tin with approximately half the base area of one of our bakery tins, keeping the mixture at a similar depth. Baking time may vary, so begin checking it earlier.

For one full-sized bakery tin, simply halve the original recipe.

A few notes from our kitchen

Weigh your eggs.
Our recipe uses grams because eggs vary in size. For the smaller batch, lightly beat the whole eggs before weighing the amount you need, and weigh the yolks separately.

Choose full-fat soft cheese.
This is what we use for the creamy vanilla filling in our recipe.

Check the flour’s protein content.
We use strong white flour with approximately 13.5% protein. The brand matters less than the flour’s characteristics. Mix gently once the flour is added.

Keep the depth consistent when scaling down.
A smaller quantity needs a smaller tin. Spreading it across a large tray will produce a thinner brownie and change how it bakes.

Allow time before slicing.
Let the brownie cool and the cheesecake layer firm up before cutting, so you can enjoy those distinct textures in each piece.
