How to Make Modelling Chocolate & Beautiful Chocolate Roses - A Pastry Chef's Recipe

By Chef Geanina Ursache | Prestige Patisserie, London

Have you ever looked at a beautifully decorated celebration cake and wondered how those delicate, realistic chocolate roses were made?

The secret might be simpler than you think.

At Prestige Patisserie, we've been making our own modelling chocolate for years, using just four ingredients: dark chocolate, glucose syrup, water and sugar.

It's one of our favourite techniques for creating handmade decorations that turn beautiful cakes into something truly special.

Today, we're sharing our professional modelling chocolate recipe and showing you how we use it to create elegant chocolate roses.

What Is Modelling Chocolate?

Modelling chocolate, also known as modeling chocolate or chocolate modelling paste, is a pliable chocolate mixture that can be shaped, rolled and sculpted into edible decorations.

Unlike ordinary melted or tempered chocolate, modelling chocolate can be worked with your hands, allowing you to create everything from delicate flower petals to intricate decorative elements.

Once shaped and allowed to firm up, it holds its form beautifully.

It's especially useful for:

  • Handmade chocolate roses and edible flowers

  • Elegant birthday and wedding cake decorations

  • Sculpted chocolate figures and decorative details

  • Creative chocolate showpieces

  • Professional celebration cake designs

And because it's made with real chocolate, it brings delicious chocolate flavour as well as beauty to your creations.

Our Modelling Chocolate Recipe – Just Four Ingredients

This is the recipe we've used for years in our patisserie.

Ingredients

  • 500 g dark chocolate – we use Callebaut 54.5%

  • 150 g glucose syrup

  • 40 g cold water

  • 60 g caster sugar

That's it! Four ingredients that can be transformed into a versatile chocolate modelling paste.

We prefer Callebaut 54.5% dark chocolate for its balanced chocolate flavour and the way it works in our recipe.

Different chocolates can behave differently depending on their cocoa butter content and composition, so the final consistency may vary if you substitute another chocolate.

How to Make Modelling Chocolate

The key to successful modelling chocolate is not just the ingredients, but also how they are combined, rested and worked.

Step 1 – Prepare the ingredients

Weigh all four ingredients carefully. Precision is important when working with chocolate, as small differences in the proportions can affect the final texture.

Step 2 – Prepare the chocolate and syrup

The chocolate and sugar syrup mixture need to be prepared and combined correctly to create the right consistency for modelling.

Take care not to overwork the mixture while combining the ingredients.

Step 3 – Allow the mixture to rest

Modelling chocolate needs time to firm up before it can be handled and shaped properly.

The final consistency should be firm enough to hold its shape but pliable enough to work without crumbling.

Step 4 – Work the chocolate

Once ready, the modelling chocolate can be gently worked to make it suitable for shaping.

The warmth of your hands will gradually soften the chocolate, making it easier to roll and manipulate.

How to Make Beautiful Chocolate Roses

This is where the magic really begins!

Chocolate roses are among our favourite decorations at Prestige Patisserie. We often use them to elevate our celebration cakes, adding an elegant handmade finishing touch.

Creating the petals

Start with small portions of modelling chocolate, shaping them into delicate petals.

The petals should be thin enough to create a realistic flower but strong enough to hold their shape.

Building the rose

Begin with a small central bud, then gradually add overlapping petals around it.

Each additional layer helps the flower open naturally, creating the beautiful shape of a blooming rose.

Adding the finishing touches

Gently shape and curve the outer petals to create movement and a realistic appearance.

No two handmade roses are exactly alike, and that's part of their charm.

Whether you're making a single statement rose or a collection of flowers for a celebration cake, the result can be truly beautiful.

More Than Chocolate Roses – Our Bake Off Experience

Over the years, we've used this modelling chocolate recipe for much more than flowers.

We even created an entire train using modelling chocolate!

And during our appearance on Bake Off: The Professionals in 2021, we used this technique to create realistic tree branches and other decorative elements for our showpieces.

It remains one of the most versatile chocolate preparations we use in our patisserie.

Tips for Working With Modelling Chocolate

Work in a cool environment. Excessive warmth can soften the chocolate and make delicate decorations difficult to handle.

Be patient. If the chocolate feels too firm, gently working a small portion with your hands can make it more pliable.

Avoid overheating. Too much heat can make the mixture greasy and difficult to shape.

Prepare decorations in advance. Chocolate roses can be made ahead of time and kept in a cool, dry environment, protected from heat, humidity and accidental damage.

Practise your petal shapes. The more you experiment, the more natural and delicate your chocolate flowers will become.
